When a Michelin Star Meets the Smash Burger: BUNZAI x Antonio Colaianni’s September Collaboration
This September, at Müllerstrasse 31 in Zürich’s vibrant Kreis 4, BUNZAI is proud to unveil a burger that bridges worlds — where Italian fine dining meets the irresistible pull of the smash burger. For one month only, we’re collaborating with one of Switzerland’s most celebrated culinary figures: Antonio Colaianni.
A household name in Zürich’s gastronomic scene, Colaianni’s accolades speak for themselves — 1 Michelin star, 17 GaultMillau points, and a legacy built at institutions like Gustav and Ornellaia. Today, he brings his signature style to Freilager, and his latest venture, La Cucina Colaianni, a refined, deeply personal exploration of Italian cuisine.
As usual, this collab developped organically. “Antonio came by as a guest, just to eat,” says our founder Mao. “We got to talking, vibing over flavor and technique. The next thing we knew, we were dreaming up a burger together.”
That dream became the Antonio Colaianni x BUNZAI Smash Burger, available exclusively throughout September — and it's as bold and nuanced as the man himself.
At the base: our signature smash-seared beef, kissed with Maillard magic. Then come the layers — Taleggio, rich and buttery with a hint of funk; Bresata, rucola, confit cherry tomatoes, finished with a punchy peperoni mayo and a tangy onion tartar.
The colors alone are enough to stop you mid-bite — ruby reds, emerald greens, creamy golds, and that signature BUNZAI burger crust. “It’s an absolute feast for the eyes,” says one of our regulars. “You can tell every element was chosen with intention.”
As with all of our collaborations, this one reflects a deeper philosophy — that great food doesn’t care about categories. Fine dining or street food, technique or instinct — what matters is soul. And Antonio Colaianni has brought his in full.
